The Gin-Gin Mule Cocktail from the Pegu Club is refreshing cocktail combines the flavors of gin, ginger, lime and mint.
It is also an absolute Modern Classic and its creator’s, renowned Bartender and Bar Owner Audrey Saunders, crowning achievement in gin. To many cocktail enthusiasts, The Gin-Gin Mule Cocktail has taken it’s much deserved place atop the pantheon of Must-Have Gin Cocktails, alongside The Martini, Gin and Tonic, Negroni and Gimlet.

Pegu Club
Pegu Club was a highly influential cocktail bar located in the SoHo neighborhood of New York City. The bar was opened in 2005 by Audrey Saunders, a well-known bartender and mixologist who was instrumental in the early days of the craft cocktail movement.
Pegu Club was known for its extensive menu of classic and contemporary cocktails, all of which were made with high-quality ingredients and a focus on balance and flavor. Popular drinks at the Pegu Club included The Pegu Club Cocktail and Gin-Gin Mule.
Sadly, Pegu Club permanently closed its doors in August 2020 due to the financial impact of the COVID-19 pandemic. However, the bar’s legacy lives on through the many bartenders and mixologists who trained and worked there, and through the continued popularity of classic and contemporary cocktails around the world.

Audrey Saunders
Audrey Saunders is a legendary bartender and mixologist who is widely considered to be one of the most influential figures in the modern craft cocktail movement. She has been instrumental in shaping the way we think about and consume cocktails.
Her innovative approach to mixing drinks has earned her numerous accolades and awards throughout her career, including being named Best Bartender at the Tales of the Cocktail Spirited Awards in 2007, and being inducted into the James Beard Foundation’s Who’s Who of Food & Beverage in America in 2014.
Today, Saunders continues to be a mentor and inspiration to bartenders and mixologists around the world, and her legacy in the cocktail world is secure as one of the pioneers of the craft cocktail movement.
Gin-Gin Mule
The Gin-Gin Mule, a modern classic cocktail, was created by Audrey Saunders at the famous Pegu Club. While it’s often seen as a variation of the Moscow Mule with gin, it also draws heavy inspiration from the mojito, illustrating the vast influence the ever-present Mojito had on bartenders at the end of the twentieth century.
The Gin-Gin Mule has delightful combination of flavors – the botanical flavors from the gin, the sharpness of ginger, the tanginess of lime and the refreshing aroma of mint.

- Fresh Mint
- Ginger Beer (Not Ginger Ale. Find Ginger Beer in larger supermarkets beside the Root Beer and/or in the section with “Cocktail Setups”. Most liquors stores sell it, too – Moscow Mules are VERY popular.)
Throwing Praise Around like Rice at a Wedding – And it is Still Not Enough!
There is not much more to say here that I haven’t said up above. Yes, I LOVE this cocktail.
The Gin-Gin Mule is one of the very first Craft Cocktails I made at home, thanks to a chance sighting in a recipe book long before I had heard of Audrey Sanders or the Pegu Club – or even owned a bottle of gin, if memory serves.
Don’t you just love starting your new life-long obsession at the very top?
Seriously, just try this recipe. I think you will love The Gin-Gin Mule as much as I do.
Gin-Gin Mule from the Pegu Club, New York, NY
Equipment
- Copper Mug (One of the only things I like about traditional Mule Cocktails is the Copper Mug they are served in. From videos I have seen and what I have read, the Pegu Club served their Gin-Gin Mules in Highball Glasses. I have had mine in mugs, glass and even Solo Cups. But the Copper Mug is my favorite. Your choice.)
Materials
- 3/4 ounce freshly squeezed Lime Juice
- 1 ounce Simple Syrup
- 6 sprigs Mint + 1 sprig to garnish
- 1 1/2 ounces Tanqueray Gin
- 1 ounce Ginger Beer
- Lime Wedge for garnish
Instructions
- Combine lime juice, syrup and mint in a mixing glass. Lightly muddle.
- Add gin, ginger beer and crushed ice to fill to about 1/2 to 3/4 full. Shake well (Be very careful and hold the top on tight as it may fly off from the carbonation. You really should never shake carbonated sodas in cocktails - but surprisingly it works best here. I have tried adding the Ginger Beer after shaking and it isn't as good. Trust the masters.)
- Strain into an ice-filled highball glass, copper mug, Solo cup (see "Equipment" above), or other glass, of choice. (Note - A few stray bits of mint will probably come out into the cocktail, too. That is fine and even desired.)
- Garnish with mint sprig and lime wedge.
- Serve immediately, ice cold.
