Miso Salted Caramel Chicken Wings Recipe

- 2 tablespoons Vegetable Oil
- 4 tablespoons White Miso
- Up to about 2 pounds Chicken Wings (less, if you prefer - See Note #1 Above)
- Salt and freshly ground Black Pepper to taste
- 3 1/2 ounces Golden Caster Sugar (See Note #2 Above)
- 1 ounce Butter
- Freshly squeezed Juice of 1/2 Lime
- 1 tablespoons Sesame Seeds
Preheat oven to 400°F.
In a small bowl, mix oil with 2 tablespoons miso.
Drop chicken wings into the mixture. Toss to coat well.
Season with salt and pepper, to taste.
Spread wings out on a large baking tray.
Place in oven and cook until done, about 45 minutes. Turn wings over every 15 minutes, for even cooking and browning. BUT ALWAYS check for doneness. (Click HERE to see How to Check if Chicken Wings are Done and Safe to Eat.) While the wings are cooking, pour sugar in a pan with 2 tablespoons of water. Stir gently to dissolve the sugar.
When it’s no longer grainy, turn up the temperature, keeping an eye on it, and boil until it’s an amber caramel.
Take off the heat and carefully stir in the remaining miso, butter and lime juice.
Pour warm caramel over finished chicken wings, coating all of them.
Sprinkle wings with sesame seeds.
Return to the oven for 5 minutes.
Serve hot.
