The Bitter Mai Tai is a highly satisfying Signature Cocktail created by New York Bartender Jeremy Oertal at Dram in Brooklyn, NYC in 2011.
It’s a drink that lives up to its name, offering a delightfully bitter twist on the traditional Mai Tai.

Dram was a popular cocktail bar located in the Williamsburg neighborhood of Brooklyn. The bar had a reputation for its expertly crafted cocktails, creative menu and laid-back atmosphere.
Bitter Mai Tai
The Bitter Mai Tai was one of Dram’s signature cocktails and it has become a favorite among customers. It’s a twist on the classic Mai Tai, a popular cocktail well-known for its frequent adaptations in the tiki world.
Dram bartender, Jeremy Oertal, put his own spin on the classic recipe by incorporating vibrantly bitter Campari. Bitter notes are not commonly found in classic tiki drinks. This infusion of bitters and other unique twists has resulted in a new class of drinks, blending tiki and traditional classic cocktails.
And we are not mad about THAT at all!

Bitter Just Might be Better
The classic Mai Tai is an amazing drink, for sure – delicious and refreshing. But, each time I have one, I can’t help but think that it could be just a little better with some tweaking. Maybe I’m not alone in this thinking and that is why it is one of the most adapted and riffed upon classic recipes.
This bitter riff just pleases me more than the original. It is like Campari is the element it was missing all along. Try it and let me know what you think – am I right or crazy?

Bitter Mai Tai Recipe from Dram, New York, NY
Materials
- 1 1/2 ounce Campari
- 3/4 ounce aged Jamaican Rum preferably Smith & Cross
- 1/2 ounce Orange Curaçao
- 3/4 ounce Orgeat
- 1 ounce freshly Squeezed Lime Juice
- Mint Sprig to garnish
Instructions
- Combine all the ingredients, except mint, in a cocktail shaker. Add ice and shake until chilled.
- Fill a large Tiki, rocks, beer or other glass with crushed ice.
- Strain cocktail into ice-filled glass.
- Add more crushed ice to over flow the top a bit.
- Garnish with mint sprig.
