Miso Salted Caramel Chicken Wings, adapted from a recipe, Miso Caramel Chicken Wings, which appeared in the June 2017 issue of BBC Good Food Magazine, got me started on a miso journey – selectively adding miso to just about everything I grill or bake lately to see if it improves the taste.

Miso Salted Caramel Chicken Wings are Perfect for Any Party, But Too Good to Save
When you taste these wings, you will instantly know that they will be welcome at almost any party, cookout, tailgating, picnic and more. But you will also know that you do not want to wait for a party to make them again.
That’s good – Because, besides being delicious, this recipe is super easy to make and requires only a few minutes work and about 45 minutes total cooking time. So they can be a light weeknight dinner or a quick snack when unexpected cocktail buddies pop over.

Miso Salted Caramel Chicken Wings Notes
Note #1 – The miso glaze from the recipe is enough for up to about 2 – 2 1/2 pounds of wings. Naturally, it will be fine if you make less. Save unused glaze in a tightly sealed container, in the refrigerator, up to 2 weeks to make more wings, if you like.
Note #2 – Golden Caster Sugar is a finely granulated unrefined sugar. It is pale golden brown and has a slight buttery flavor. It is popular in the United Kingdom for the color and taste it brings to foods (It makes a delicious Simple Syrup for cocktails!) You can find it in the US in upscale supermarkets. If you can not find it, substitute Raw Cane Sugar, Demerara Sugar, Turbinado Sugar or even White Sugar. Do not substitute Brown Sugar.
Miso Salted Caramel Chicken Wings Recipe
Materials
- 2 tablespoons Vegetable Oil
- 4 tablespoons White Miso
- Up to about 2 pounds Chicken Wings (less, if you prefer - See Note #1 Above)
- Salt and freshly ground Black Pepper to taste
- 3 1/2 ounces Golden Caster Sugar (See Note #2 Above)
- 1 ounce Butter
- Freshly squeezed Juice of 1/2 Lime
- 1 tablespoons Sesame Seeds
Instructions
- Preheat oven to 400°F.
- In a small bowl, mix oil with 2 tablespoons miso.
- Drop chicken wings into the mixture. Toss to coat well.
- Season with salt and pepper, to taste.
- Spread wings out on a large baking tray.
- Place in oven and cook until done, about 45 minutes. Turn wings over every 15 minutes, for even cooking and browning. BUT ALWAYS check for doneness. (Click HERE to see How to Check if Chicken Wings are Done and Safe to Eat.)
- While the wings are cooking, pour sugar in a pan with 2 tablespoons of water. Stir gently to dissolve the sugar.
- When it’s no longer grainy, turn up the temperature, keeping an eye on it, and boil until it’s an amber caramel.
- Take off the heat and carefully stir in the remaining miso, butter and lime juice.
- Pour warm caramel over finished chicken wings, coating all of them.
- Sprinkle wings with sesame seeds.
- Return to the oven for 5 minutes.
- Serve hot.
