Terra Firma is a riff on the Classic Cocktail, the Vieux Carré, created by superstar bartender, Jeffrey Morgenthaler.
Made with Japanese Whisky in place of Vieux Carré’s Rye Whiskey and Apple Brandy in place of Cognac, Pacific Standard’s Signature Cocktail, Terra Firma, puts a modern spin on the New Orleans-Favorite.

Creator Jeffrey Morgenthaler
Jeffrey Morgenthaler is a popular and influencial bartender, author and blogger. He was responsible for popularizing barrel-aged cocktails beginning in 2010 and bottled carbonated cocktails beginning in 2011. Around 2012, he began creating craft cocktails that are upscale versions of the 1980s “disco-era” drinks, including the Amaretto Sour.

Terra Firma Cocktail
Jeffrey Morgenthaler says that when they were creating the beverage selection for Pacific Standard they noticed that their extravagant lobby bar menu was missing a traditional, spirit-forward cocktail, so he created a Vieux Carré variation called Terra Firma. This new cocktail takes a contemporary approach to the timeless classic by substituting Japanese whisky for rye and apple brandy for Cognac.

Better Than the Original?
I love Japanese Whisky and Apple Brandy – and I love a good Vieux Carré Cocktail. So trying this riff on the classic Vieux Carré was a no-brainer. I’m glad I did – I think I like it better than the original.
It helps that the smooth drinking Suntory Toki Japanese Whisky blends so well with the sharp taste of Laird’s Apple Brandy. This is a delicious, enjoyable cocktail I will return to.
Terra Firma Cocktail Recipe from Pacific Standard, Portland, OR
Materials
- 3/4 ounce Japanese Whisky preferably Suntory Toki
- 3/4 ounce Apple Brandy preferably Laird’s Bonded Apple Brandy
- 3/4 ounce Blanc Vermouth preferably Dolin
- 1/4 ounce Bénédictine
- 1 dash Angostura Bitters
- Lemon Twist to garnish
